Our zero-waste kitchen, told through one carrot, seven times.
One carrot, seven times
The tops go into a green oil we finish the crudo with. The peel is dehydrated and blitzed into a powder for the bread service. The body is roasted whole in ash. The trim goes into stock. The stock goes into the braise. The braise scraps go into the staff meal. Whatever is left goes into the compost that goes back to the farm.
Why we count
We weigh our waste every night and write the number on the board by the door. In the first month it was eleven kilos. Last month it was under two. Nobody was asked to try harder; they were just shown the number.
