01 / The Fire
We build the room around the flame
Every plate passes over live coals. The grill is the first thing you see and the last thing you smell. There is no induction hob in this building, and there never will be.
02 / The Table
Forty seats, one seating, no rush
We serve forty people a night and we are not interested in turning tables. You get the room for as long as you want it. The last plate leaves the pass at one in the morning.
03 / The Cult
You are not a customer here
Regulars get a key to the back door and a standing Tuesday. There is no loyalty scheme, no app, no points. Just a list on the wall, and your name is either on it or it isn’t.

Orders are called, not printed. The pass is a single oak plank and every plate crosses it in front of the room. Nine cooks, one voice, and a rule that anyone can stop service if something is wrong.
